Ocean-inspired cakes are our summer obsession right now. Seashells lead the way — as full sculptural forms, jelly coastal scenes, or a single motif pressed into smooth white fondant. We rounded up the most beautiful designs, from the wildly sculptural to the barely-there minimalist.

At the sculptural end, bakers are building entire shell structures. Layers of scallops stacked into architectural tower forms, or cakes covered edge to edge in opalescent fan shells with tiny sugar pearls nestled in between. Luminous, tactile, and gloriously excessive.
The whimsical middle ground is just as compelling. Shells share space with tropical blooms, starfish, and lush trailing botanicals for a look that’s simultaneously coastal and garden-party. Unexpected, a little maximalist, and somehow always elegant. It works especially well as a coastal wedding cake, where the brief calls for something festive without veering into full beach-theme territory.

The jelly ocean cake is its own category. Jewel-toned and glassy, with sea life suspended in translucent blue-green layers, cool and ethereal and almost too beautiful to slice. At the far end, some bakers go full landscape: sculpted coastal scenes with cliffs, sandy coves, and cerulean ocean tiers that read more like miniature dioramas than desserts.
And if you’re building a full dessert table, the madeleine is the natural companion. Shell-shaped by design and endlessly adaptable: matcha-glazed, navy-dipped, finished in gold leaf. It extends the aesthetic beyond the main cake without any extra effort.
Pearl-covered and maximalist or stripped back to a single shell on white buttercream, this aesthetic has a version for every celebration this summer.
